is a very unimpressive example. but, maybe the shout out will
sell another book.

my book, i'd like to thank you. because i don't think that
aforementioned posting helped to "sell another book" at all-- but
hopefully this one will! i should also clarify the book does not
use philippe as a "character" to "gain access," the book is an
"insider's" (that's me) DIARY and philippe happens to be in it
quite a lot because we worked together for the same company. oh
and by the way, the book is probably better well-known than you
realize-- it's been mentioned in several major newspapers and
magazines and e-publications and is currently being considered
for both a movie option and a television series. [so nyeeeeah.] i
also did defend philippe quite vigorously (is that "impressive"
?? i mean since my praise, unlike your criticism, is buttressed

along with philippe. he's a good guy but sometimes people just
rub each other the wrong way. it doesn't seem any of your
complaints are at all egregious, so it's actually rather

That's why all restos should use Keith's method of only hiring men bartenders. They can carry heavy ice buckets and cases of beer, so there's no need for a barback. Problem solved!

by the by, dan barber (and most of the managers at that beautiful hell hole) is probably the biggest asshole i've ever met. he used to fucking rail against top chef before they decided to suck his balls every season.

Okay, maybe he LOOKS intimidating what with that shiny polished cue-ball of his and that somewhat unnerving unblinking gaze, but I love him. I think he's one of the bestest stand-up dudes I've ever worked with (which might not be saying much, considering all the crackheads I've toiled under).

As for his shoes-- what can I say? He's a stylin bitch. I bet those crocodiles are Gucci or Prada or Dolce&Gabbana and probably cost more than two dinners at Stone Barns. (You aint seen nuthin til you've caught him rockin his cherry-red Versace "mao tse tung" jacket, though.)

Barber I don't know, but-- I CAN IMAGINE.

Philippe can be stern, sure, but he's fair. He is the type of rare, rare, very rare GM who honestly puts the best interest of the restaurant (and the patrons) first.

I have worked under FOUR STAR CHEFS who don't even do that shit. No joke.

@Abbe Diaz: i've seen a hint of the pussycat in him, but only when i would talk to him about gardening, which homeboy LOVES.

he is very good at his job, which i think is what made him so terrifying...it's like he was everywhere all at once.
i hated working there though, but it's mostly due to the other supremely douchey (and not at all terrifying) managers. and 3/4 of the customers. and dan barber. just hearing his voice makes me all kinds of stabby.

i'd love to read your book but i won't make you send me one for free smile.gif what's it called?
